PORK TENDERLOIN DIABLO
 
1 lb. pork tenderloin
1⁄4 cup flour
tsp. salt
1⁄4 tsp. pepper
tbsp. fat
2 cans tomato sauce
clove garlic, minced
1⁄4 tsp. oregano, 1⁄4 tsp. basil
tsp. sugar
4 oz. can mushrooms, drained
12 green pepper strips (1⁄4" x l 1⁄2")
1⁄2 cup onion rings
Cut tenderloin crosswise into 2" pieces. Flatten slightly with meat hammer. Mix together flour, salt and pepper. Roll tenderloin in flour. Brown well in fat in heavy skillet. Blend together tomato sauce, garlic, oregano, basil and sugar. Pour sauce over tenderloin. Cover and cook slowly about l hour. During last half of cooking time add umshrooms, green pepper and onions. Remove meat to platter and serve with sauce. Serves 5-6.
