SICILIAN CASSATA (Italian Cake)
Bake 2 pound take mixes, each in a 9" round pan. Cool well. Then slice each cake through the middle so you have 4 layers.
Filling; Mix 1 lb. ricotta cheese, 1⁄4 cup sugar, 2 tbsp, heavy cream, 3 tbsp. of Kalua (liquer) Spread between layers.
Frosting' Melt 12 one pkg. chocolate chips in 3⁄4 cup black coffee.
Beat in 1⁄2 lb. butter (to speed up thickening process place pan in ice cubes or very cold water).
Frost top and sides of cake. Serves 16.
